This knife design specs came from a client named John Downie who commissioned me to make him one. It is a long slender fine slicer, made from the finest tool steel on the market today, 5/64" thick.
The design felt balanced and clean so I felt to include it on this page.
The original design called for 300mm length and 43 mm width, which I am rounding off to 2" wide and 12" long.
Are you ready for a serious Japanese style knife? Well, I think this is it. If it is to long, look at the Kiritsuke. Want a short one, look at the Hankotsu.

Above: 9.5" Kiritsuke with standard Asian style handle and stabilized Maple burl. This beautiful piece is 2.25 inch wide can come in 9", 9.5" and 10" and 10.5" , and is an all purpose kitchen knife the way I make it with a slight French curve rather than the Asian flat edge, which is nearly impossible to maintain in the kitchen.
