    This knife design specs came from a client named John Downie who commissioned me to  make him one.
    It is a long slender fine slicer, made from the finest tool steel on the market today, 5/64" thick.

    The design felt balanced and clean so I felt to include it on this page.
    The original design called for 300mm length and 43 mm width, which I am rounding off to 2" wide and 12" long.
    Are you ready for a serious Japanese style knife? Well, I think this is it. If it is to long, look at the Kiritsuke. Want a short one, look at the Hankotsu.

Above: 9.5"  Kiritsuke with standard Asian style handle and stabilized Maple burl. This beautiful piece is 2.25 inch wide can come in 9", 9.5" and 10" and 10.5" , and is an all purpose kitchen knife the way I make it with a slight French curve rather than the Asian flat edge, which is nearly impossible to maintain in the kitchen. Fancy Handle, above - Western style fancy handle with stabilized Box Elder Burl wood
with two 1/8" black and white spacers ~ brass/white/ black/handle wood.

Above: Extra fancy western style handle - 7" x 2.5" high carbon tool steel kitchen knife. The blonde handle wood  is called Myrtle. Above the Myrtle is steel sheet (I also use brass) , 1/2" stabilized Redwood burl insert, white and black spacers and then the brass bolster. Handle has brass 1/8" rivets as well as a company chop in the butt. The chop is a 1/4" tube filled with red dyed epoxy and brass rods and tubes.  While the wood insert will vary from piece to piece, one can order this style of handle. It is called extra fancy.  E-mail or call me and we can discuss particulars. Other wood inserts I use are Ebony and various dyed stabilized woods.
