     All my Paring knives have 3" blades and 5 1/4" handles. Brass is 3/4" wide. I taper the bolster to the blade so one can easily choke up when doing close work. If you want a longer blade, see the 1" x 4" on the Kitchen knife page that has knives from 4" - 6". Many people are very fussy about the handle of their paring knife, so if you want a specially designed unit or for me to copy your current paring knife, e-mail me.

Above: 8" x 2.5" extra fancy kitchen knife with west style handle and walnut wood.
Array is brass bolster/white/black/stabilized Maple burl/brass and the tiger striped walnut.
Finished with wax/oil combo.  Steel is 1/16th" thick high carbon tool steel. All handles are 5.25".

Above top : Strongback 3" Paring knife with standard Rose Wood handle.

Bottom: Traditional 3" Paring Knife. Both are .062" or 1/16th" thick High Carbon tool steel

with standard handle that has Brass bolsters and company 1/4" chop in the handle 'butt'.

Above: Fancy western style handle, with an 8" x 2.5".
This kitchen knife has  stabilized Box Elder Burl wood.
The progression has two 1/8" black and white spacers and lastly the handle wood of Box Elder. 
 

  Below- three spacers, 1/8" thick with Claro Walnut

Above: Extra fancy handle on a 7" x 2.5" high carbon tool steel kitchen knife. The blonde handle wood is called Myrtle. Above the Myrtle is brass sheet/1/2" stabilized Redwood burl insert/white/black spacers and then the brass bolster. Handle has brass 1/8" rivets as well as a company chop in the butt. The chop is a 1/4" tube filled with red dyed epoxy and brass rods and tubes.  While the wood insert will vary from piece to piece, one can order this style of handle.  E-mail or call me and we can discuss particulars. I use are Ebony and various dyed stabilized woods.
