French polish and liners are $20 per knife.
This basic set features a stainless steel fork and a carbon steel 9 inch carving knife on the left and a 7" on the right. Both are shown with a Rose Wood handle. This set makes an ideal gift for newlyweds, birthdays or for as a gift to commemorate a special occasion. ABOUT STEEL:
The carbon steel I use is [ as is all my work ] 1/16th or .062 inch thick. It is 1084 HRC carbon tool steel, which is heat treated one at a time by me in my shop. All the sweeps of the edges of my knives have the classic French curve, for ease of use and resharpening and for that nice rocking motion. The blade and brass bolster are always mat finished [ versus mirror finished ] . The reason for this is that they are not jewelry that traditionally gets a mirror finish , but a functional tool and mat finish makes the price much more affordable .
About Handles:
We use various woods for the handles, depending on your needs and/or preferences. The base wood is called Myrtle Wood or Bay Laurel. It is generally light colored although some pieces can be tawny. Some pieces have tremendous chatoyance . It was locally harvested over 25 years ago . I also use Rose Wood, that was single tree eco-harvested. It is oily and heavy. Both Myrtle and Rose Wood are the same price. The last wood I offer, for a premium cost, is Double Dyed stabilized Black Ash or California Buckeye burl wood. It is dyed Red/Black. The Dyed Stabilized Wood does not absorb moisture and the color will not fade . The wood is highly figured burl with swirls and knots , which is stabilized to prevent the wood from absorbing water and chemicals .
All handles come finished to 400 grit with a coat of mineral or vegetable oil. Presently I use organic toasted sesame oil. The brass bolster is riveted and glued on and is in between the handle and the blade. It serves to protect the end grain of the handle wood . You choose the wood for your handle. Handles measure 5 inches and are triple riveted with brass rivets. The rivet in the ‘butt’ of the handle is my chop and is filled with dyed red epoxy and small brass and steel rods . it goes all the way thru the handle and is functional.

1- Wood choices- Myrtle, rose wood and stabilized double dyed California Buckeye. Want other wood choices, ask me and I will send you some links for you to review.
2- You can order a high gloss French wax polish for the handle wood, that will make the wood and bras shine like a mirror instead of the usual oil finish. Cost is $20 per knife.
3 - You can order different colored liners between the wood and steel. See the main page for photos of a 1" x 4" with a red liner. Want a red liner- it costs $20 - just send me a note.
