Paring Knives

Straight back paring knives with Myrtle Wood . 5" handle with 3 inch blade. I can make this paring knife for you if you like just specify the length blade. I have made it with a 2" to 3.5" blade.



Above: An example of all adds on's Double Brass Bolsters with red liners, on a 8 x 2.5 inch Chef's Knife that I did a high French polish on . If you want your knives to have double brass, red liners or a high French polish , just order them as a normal order , and e-mail me of your wish . Cost for double brass is $35 extra per knife . French polish and liners are $20 per knife.

The traditional Paring knife [top] has a 3 inch blade and is one inch wide at it's widest part . It has a 5 inch handle - which is sized to fit the hand. This knife can be used as a paring knife and on a board.

The second paring knife I make is called the "birds beak" (see below), and has a shape like a half-moon. It is approximately 3 inches long. Used strictly for paring and detail work - very rare and the perfect gift or addition to a chefs collection .

The last wood I offer, for a premium cost, is Double Dyed stabilized Black Ash or California Buckeye burl wood. It is dyed Red/Black. The dyed Stabilized Wood does not absorb moisture and the color will not fade . The wood is very highly figured burl with swirls and knots, which is stabilized to prevent the wood from absorbing water and chemicals . All handles come finished to 400 grit with a coat of mineral or vegetable oil. Presently I use Olive Oil. The brass bolster is riveted and glued on and is in between the handle and the blade. It serves to protect the end grain of the handle wood . You choose the wood for your handle. Handles generally measure out to about 5 inches - 3/4" of brass and 4 1/4 " of wood. All blade lengths are close but not exact .

1- Wood choices- Myrtle, Rose wood and stabilized double dyed California Buckeye. Want other wood choices, ask me and I will send you some links for you to review.

2- You can order a high gloss french wax polish for the handle wood, that will make the wood and brass shine like a mirror instead of the usual oil finish. Cost per knife is $20 - just e-mail me.

3- You can order different colored liners between the wood and steel. See my front page for photos of a 1" x 4" kitchen knife with a red liner. Cost is $20 per knife.
