Above: Rose Wood handle, brass bolster is 3/4" with 5 " overall length on the handle. Steel is 1084 HRC (carbon steel ) which is 1/16th" thick and 4 inches long. You can order the steak knives in 3" or 5" or get a combination set with mixed woods and lengths. E-mail me for more details.

ABOUT STEEL:
All prices shown on this page are for steak knives with 4 inch blade lengths. If you want 4.5 inch blades or 5 inch blades, e-mail a note and I will be happy to send you the additional cost to make them. You can also get different lengths in one set. One client got adult and child sized steak knives in one set. Just ask.
The carbon steel I use is [ as is all my work ] 1/16th or .062 inch thick. It is 1085 cold rolled high carbon tool steel, which is heat treated one at a time by me in my shop. This allows for a knife that will keep a keen edge yet is noticeably easy to re-hone for a new keen edge.
All the sweeps of the edges of my knives have the classic French curve, for ease of use and resharpening and for that nice rocking motion . The blade and brass bolster are always mat finished [ versus mirror finished ] . The reason for this is that they are not jewelry that traditionally gets a mirror finish , but a functional tool and mat finish makes the price much more affordable .
About Handles:
Note: you can mix the set up with different woods, just ask.
We use various woods for the handles , depending on your preference. The first is called Myrtle Wood or Bay Laurel. It is generally light colored
( lighter than the Rose Wood )although some pieces can be tawny.Many pieces have tremendous chatoyance . It was locally harvested over 25 years ago.
I also use Santos Rosewood, which is heavier and more oily as well as darker. Both Myrtle and Rosewood are the same price.
The last wood I offer, for a premium cost, is Double Dyed stabilized Black Ash or California Buckeye burl wood. It is dyed Red/Black. The dyed Stabilized Wood does not absorb moisture and the color will not fade . The wood is very highly figured burl with swirls and knots, which is stabilized to prevent the wood from absorbing water and chemicals .
All handles come finished to 240 grit with a coat of mineral or vegetable oil. Presently I use Olive Oil. The brass bolster is riveted and glued on and is in between the handle and the blade. It serves to protect the end grain of the handle wood . You choose the wood for your handle. Handles generally measure out to about 5 inches - 1" of brass and 4" of wood. All blade lengths are close but not exact .

2- I can make extra large or extra small and in between, as I can copy almost any handle design.
3- You can order a high gloss french wax polish instead of the oil finish.
